From 'A Taste of Aloha' cookbook - a hawaiian-style fusion recipe for pesto. Ingredients:
1/2 cup chopped fresh ginger |
1/2 cup chopped scallion |
1/2 cup chopped fresh coriander |
1 teaspoon chopped garlic |
1/2 cup peanut oil |
2 teaspoons sesame oil |
salt |
fresh ground white pepper |
1 lemon, juice of |
2 teaspoons grated parmesan cheese |
Directions:
1. In a small bowl combine the ginger, scallions, coriander, and garlic. In a saucepan, heat the peanut and sesae oils until they are hot; pour the oils over the ginger mixture. Add the salt and pepper, lemon juice, and Parmesan and mix well. Refrigerate until ready to use. |
