Hawaiian Mochi Fried Chicken |

Hawaiian fried chicken on a rice flour batter. Ingredients:
3 lbs chicken breasts, boneless and skinless and cut finger-size nuggets |
3/4 cup mochiko sweet rice flour (glutinous rice flour) |
3/4 cup cornstarch |
3/4 cup sugar |
3/4 cup soy sauce |
1 1/2 teaspoons salt |
6 eggs, beaten |
2 stalks green onions, chopped fine |
6 garlic cloves, minced |
Directions:
1. Set the chicken aside. 2. Combine the ingredients and mix well. Add the chicken. Marinate overnight. 3. In a wok add oil about half way up and heat to 350° add in small amount of the chicken deep fry until golden brown. Drain onto a rack. |
