These are wonderful meatballs to serve as an appetizer or as a meal over rice. Ingredients:
1-1/2 lb. ground beef |
1 t. shortening |
2/3 c. cracker crumbs |
2 t. cornstarch |
1/3 c. minced onion |
1/2 c. packed brown sugar |
1 egg |
1 can (13.5 oz.) pineapple tidbits, drained (reserve juice) |
1-1/2 t. salt |
1/3 c. vinegar |
1/4 t. ginger |
1 t. soy sauce |
1/4 c. milk |
1/3 c. chopped green pepper |
Directions:
1. Mix meat, crumbs, onion, egg, salt, ginger & milk. 2. Shape mixture by rounded tablespoonfuls into balls. 3. Melt shortening in large skillet; brown & cook meatballs. 4. Remove meatballs; keep warm. 5. Pour fat from skillet. 6. Mix cornstarch & sugar. Stir in reserved pineapple syrup, vinegar & soy sauce till smooth. 7. Pour into skillet; cook over medium heat, stirring constantly, until mixture thickens & boils. 8. Boil & stir 1 minute. 9. Add meatballs, pineapple tidbits & green pepper; heat through. 10. Stir meatballs & sauce together; serve warm. |
