This is a recipe handed down to me from my mom. This is a unique twist for sweet and sour made with meatballs. Ingredients:
1 lb ground beef |
1/2 teaspoon salt |
1/4 teaspoon ground ginger |
1 egg |
1 teaspoon water |
1/4 cup flour |
1 (14 ounce) can pineapple chunks |
1/4 cup brown sugar, firmly packed |
2 tablespoons cornstarch |
1/4 cup cider vinegar |
1 tablespoon soy sauce |
2 green peppers, cut in strips |
Directions:
1. Mix ground beef with salt and ginger; shape into 16 meatballs. 2. Beat egg slightly with water; dip meatballs into egg mixture, then into flour to coat well. 3. Brown meatballs in large frying pan; remove with a slotted spoon and set aside. 4. Drain pan. 5. Drain syrup from pineapple into 1 cup measure; add water to make 1 cup; stir into drippings in pan. 6. Mix brown sugar with cornstarch, vinegar, and soy sauce; stir into pineapple juice mixture; cook stirring constantly until sauce thickens and boil 3 minutes. 7. Arrange meatballs, pineapple chunks, and green pepper strips in separate piles in pan; stir each gently to coat with sauce; cover. 8. Simmer 10 minutes or until meatballs are cooked through. 9. Serve with hot rice. |
