Hawaiian French Toast Sandwich |

From Parenting mag May 2004. Ingredients:
3 large eggs |
2/3 cup nonfat milk |
nonstick cooking spray |
8 slices white bread or 8 slices sourdough bread |
1 tablespoon spicy brown mustard |
8 ounces sliced low-sodium ham or 8 ounces smoked turkey |
8 ounces crushed pineapple, drained |
Directions:
1. Heat oven to 400 degrees. 2. Whisk eggs and milk in a shallow bowl. 3. Heat large skillet coated with nonstick cooking spray over medium heat. 4. Dip 4 bread slices in egg mixture; cook 3 minutes per side, or until golden brown. Remove from skillet; repeat with remaining 4 slices. 5. Thinly spread 4 slices with mustard; top each with 1/4 of the ham and pineapple. Cover with remaining slices. 6. Place sandwiches on a baking sheet; heat in oven, about 3 minutes. |
