Curry stew is common at Hawaiian plate lunch cafes. It is served over plain white rice. Ingredients:
2 lbs beef stew meat |
2 potatoes, cubed |
1 onion, quartered |
2 carrots, sliced |
3 celery ribs, chopped |
4 tablespoons curry powder |
2 teaspoons peanut oil |
4 cups water |
2 teaspoons beef bouillon |
2 teaspoons salt |
1/4 cup flour |
1/4 cup water, very cold |
4 cups steamed rice, hot |
Directions:
1. Brown meat on all sides, cover with water, add bouillon, and cook covered for 1.5 hours. 2. Add vegetables and cook until potatoes and carrots are tender. 3. Cook curry powder in peanut oil to get rid of the raw taste and add it to the mixture. 4. After the stew is cooked, mix flour and cold water well, using a wire wisk to remove all the lumps, and slowly stir it into the stew. 5. Cook, stirring constantly, until the stew thickens. 6. Serve over steamed rice. |
