Hawaiian coconut cookie bar easy to make, you can double this recipe. very good if you like coconut Ingredients:
1 .- bottom layer crust |
1/2 cup butter or margarine |
1 cup flour |
1/2 cup brown sugar |
2 .- filling |
2 eggs |
1 cup brown sugar |
1 teaspoon vanilla |
2 tablespoon flour |
dash of salt |
1 teaspoon baking powder |
1-1/2 cups coconut flakes |
1 cup chopped dates( or 1 cup chopped macadamia nuts) your choice.........me i like the nuts. |
3.- frosting |
1-1/2 cups powdered sugar |
2 tablesppoons butter or margarine |
1 teaspoon lemon juice |
Directions:
1. Bottom layer; cream all ingredients; pat into bottom of ungreased 11x7x1-1/2 inch baking pan 2. bake at 350 degrees for 15 min. cool. 3. FILLING; while bottom layer cools, creameggs,sugar, and vanilla.blend in remaining ingredients. 4. pour over baked cooled bottom layer. 5. return to 350 degrees oven, and bake for 2o minutes longer....cool 6. FROSTING; blend all ingredients thoroughly, spread over filling after it is cooled, 7. cut into bars or squares. |
