This dish puts a mild sweet spin on a savory favorite
Ingredients:
1 whole clove of garlic chopped
1 bottle of beer
1 can of tomatoes (large can)
2 large sweet vidalia onions (chopped fine)
3 bell peppers chopped fine
1 pineapple chopped finely
3 skinless chicken breasts (i also substitute pork loin)
1 can white kidney beans
2 large carrots chopped fine
3 stalks of celery chopped fine
2 jalapeno peppers chopped
2 tablespoons of cumin
chili powder to taste
1/2 cup of soy sauce
1/4 cup of finely grated ginger root (fresh only)
lots of chopped basil
1 cup of honey
water don't use stock ...i found that it doesn't add nor take away from the flavor so just use old fashioned water (just enough to cover)
Directions:
1. Put in a large pot in no particular order and simmer all day. Serve with Colby cheese or sour cream. This chili freezes great and becomes more mild the second day.
