This recipe is for a Crockpot. It's sweet and smokey, inexpensive and really easy! I keep lots of the ingrediants in the house, b/c in a pinch, it works great! My husband LOVES this recipe and he can be hard to please b/c he gets really sick of chicken. I load this up in the am before I leave for work and come home at 6 to a house smelling amazing!!! I hope you try this one...And if you cook extra chicken, it tastes amazing on a nice salad for the lunch the next day! Ingredients:
3 chicken breasts (i get the flash frozen ones so i can only cook what i need) |
1 cup diced pineapple (for a more thick sauce, drain the fruit, but i usually use the juice becauce it really adds a sweet ) |
2 cups frozen sliced red and green peppers (again, i get the frozen bags and use only the amount needed but fresh is fine too) |
1/2 cup frozen chopped onion, however fresh is fine |
2 cups of smokey style honey barbecue sauce |
3 tablespoons honey |
1 pinch salt and pepper |
1 pinch of minced garlic |
Directions:
1. Put all the ingredients in the crockpot and set on either low for 8 hours or on high for about 4 or 5 hours-Or as long as it takes for the chicken to be totally cooked. Once the chicken is cooked, serve over a bed of brown rice, with the sauce, veggies and fruit along side! |
