Hawaiian beets with pineapple? That extra splash of flavor and light touch of sweetness helps make beets more appealing to younger family members. From an old newspaper clipping Ingredients:
2 (16 ounce) cans whole beets, drained |
1 (20 ounce) can pineapple chunks, drained (reserve juice) |
1 tablespoon cornstarch |
1 tablespoon light molasses |
1/4 teaspoon salt |
Directions:
1. Drain beets and pineapple separately; measure pineapple juice to make 1 cup (if needed add a little beet juice to make up any difference). 2. Combine juice, cornstarch, molasses and salt in pan; stir until lumps are gone. 3. Heat over medium heat until sauce thickens and is clear. 4. Add beets and heat until hot. 5. Just before serving, add pineapple; warm two or three minutes. |
