2 cups sugar |
1/2 cup shortening |
2 tablespoons salad oil |
2 cups mashed bananas |
3 large eggs |
2 1/4 cups flour |
2 1/2 teaspoons baking soda |
2 1/2 teaspoons baking powder |
3/4 teaspoon salt |
3/4 teaspoon vanilla |
1 1/2 teaspoons lemon juice |
1 cup buttermilk |
Directions:
1. In mixing bowl,cream sugar,shortening and oil. 2. Add bananas, cream well. 3. Add eggs, mix well. Combine all ingredients, mix till smooth at medium speed for 3 minutes. 4. Pour batter into greased or paper lined muffin pans. Bake 375 degrees for about 20 minutes. |
