This is an awesome recipe that you can easily adapt to your tastes and cooking time! (That's the best kind, right?lol) Use chicken or beef, start fresh, or use leftovers; and use your favorite garnishes. Can be used as a meal or appetizers either one. Read more . Great recipe for using up leftovers, the kids can help, and eveyrone loves them! Ingredients:
24 wonton wrappers |
2 boneless skinless chicken breasts (or equivalent breast tenderloins, etc) |
evoo |
1 t butter or margarine |
seasoned salt |
garlic pepper |
1 t taco seasoning |
1 t chili powder |
1 t cumin |
1 small onion, diced |
1 red bell pepper, diced |
1 small can green chiles |
1 cup salsa |
1 cup ranch dressing |
8oz shredded cheese (i use mexican flavor - could use pepper jack, etc) |
24 slices jalepenos *optional |
chopped tomatoe, sliced black olives *optional |
muffin tins for 24 muffins |
** can use ground beef or steak strips with same seasonings, can throw in some black beans and/or corn |
Directions:
1. Dice chicken into bite size pieces 2. Saute in EVOO and butter with seasonings, onion, pepper and chiles 3. Set aside 4. Mix together salsa and ranch, set aside (OR, just use ranch and garnish with salsa after cooking) 5. Pre-heat oven to 400. 6. Spray muffin tins with cooking spray. 7. Put one wrapper down into each tin to form a cup. 8. Bake until slightly crisp. 9. Fill each cup with chicken mixture, top with cheese, optional garnishes, and ransh/salsa mixture 10. Put back into oven long enough to heat and melt the cheese. 11. Cool for 5 minutes then you should be able to lift them out of the tins and put on serving platter. |
