I am in a serious Hawaiian mood. I'll be leaving for Maui in 5 days. I can't wait! So, I decided to whip out my Hawaiian Desserts Cookbook and make a couple of tasty traditional Hawaiian desserts. Haupia is basically a coconut flavored pudding. Read more . Be sure to check out my Coconut Custard Mochi recipe too. Both these recipes are delicious! Ingredients:
crust |
2c graham cracker crumbs |
1c butter, melted |
cream cheese filling |
2 (8 oz) pkgs cream cheese, softened |
1 1/2c powdered sugar |
1t vanilla |
2c cool whip |
haupia |
3 (13.5 oz) cans coconut milk |
1 1/2 c sugar |
1 1/3c cornstarch |
Directions:
1. Combine Crumbs and Butter. Press into a 9x13 pan. Refrigerate. 2. Beat Cream Cheese and Sugar; add Vanilla. Stir in Cool Whip. Spread on crust. Refrigerate until set. 3. In a saucepan, mix all ingredients for Haupia until smooth. 4. Cook on Medium heat, stirring constantly, until mixture thickens. 5. Remove from heat and cool down mixture continuing to stir. 6. When cool to touch, pour Haupia over Cream Cheese filling. 7. Refrigerate to set. |
