I got a sample recipe cards in the mail from Great American Recipes and this was the only one I kept. These potatoes are wonderful! You can also use fresh herbs but use 3 T total. Ingredients:
4 medium potatoes, even size and shape |
1 teaspoon salt |
3 tablespoons butter, melted |
3 teaspoons dried herbs, of your choice such as a mix of parsley, sage, thyme and chives |
4 tablespoons cheddar cheese, grated |
1 1/2 tablespoons parmesan cheese, grated |
Directions:
1. Preheat oven to 425 degrees. 2. Peel potatoes if the skin is tough otherwise just scrub and rinse them. 3. Cut potatoes into thin slices but not all the way through. Use a handle from a spoon to prevent knife from going all the way through. 4. Put potatoes in a baking dish and fan them slightly. 5. Sprinkle with salt and drizzle with butter. Sprinkle with herbs. 6. Bake for about 50 minutes. 7. Remove from oven and sprinkle with cheeses. 8. Bake potatoes for another 10-15 minutes until lightly browned, cheeses are melted and potatoes are soft inside. Check with a fork. |
