Hasselback Potatoes

Ingredients:
4 medium potatoes
2 tablespoons melted butter
2 tablespoons olive oil
lemon pepper
salt
Directions:
1. Preheat oven to 190C Peel potatoes and slice in half lengthways.
2. Using a small sharp knife, make cuts 1/4 inch apart from top almost to bottom, across all of potato.
3. (be careful not to slice right through) Mix butter and oil together and brush potatoes liberally with it.
4. Sprinkle with the salt and pepper.
5. Bake for about 45 minutes or until tender.
