Hashwa Roz Wa Jowz (Rice-Nut Mixture)

Would also be delicious used to stuff a lamb breast.
Ingredients:
1/3 cup pine nuts
3 tablespoons butter
2 cups rice
4 cups boiling water
1 pinch cinnamon
salt & pepper, to taste
2 tablespoons parsley, minced
Directions:
1. Melt butter in saucepan and brown pine nuts, being careful to not burn.
2. Add rice and stir for 2 minutes. Add water.
3. Add cinnamon, salt and pepper.
4. Bring to a boil. Cover and reduce heat. Simmer for 15 minutes or until liquid has evaporated.
5. Add parsley and mix well.
