I don't recall where I found this, just posting for safe keeping. Ingredients:
1 1/2 lbs potatoes, shredded (4 medium) |
2 tablespoons finely chopped onions |
1/2 teaspoon salt |
1/8 teaspoon pepper |
2 tablespoons margarine |
2 tablespoons vegetable oil |
Directions:
1. Prepare and boil potatoes (shred enough to measure 4 cups). 2. Toss potatoes, onions, salt and pepper. 3. Heat margarine and oil in 10-inch skillet until margarine is melted. 4. Pack potato mixture firmly in skillet, leave space around edge. Cook low until brown, 10-15 minutes. Cut potato mixture into fourths turn. Add 1 tablespoon vegetable oil (optional). Cook until bottom browns, 12-15 minutes longer. |
