Parboiled potatoes are sliced and fried with bacon and onion and topped with fresh oregano. Tasty!
Ingredients:
4 medium potatoes, peeled
3 slices bacon, diced
butter or oil (for frying)
1 onion, sliced
1 tablespoon chopped fresh oregano
Directions:
1. Parboil potatoes (or microwave on HIGH for 5 minutes). Cut into medium thick slices. Fry bacon until fat is transparent. Add butter and fry onion and potato with bacon, turning until browned. Sprinkle with oregano. Serves 6.
