This is a dish I grew up eating. We still love it and it's a great base recipe to make some additions to. Ingredients:
1 24 oz bag of frozen hah browns, thawed |
1/3 cup melted butter |
1 cup shredded cojack cheese |
1 cup shredded cheddar cheese |
1 cup diced cooked ham |
1/4 cup sauteed onions, chopped |
1/4 cup sauteed green pepper, chopped |
2/3 cup cream or milk |
3-4 eggs |
Directions:
1. Grease quiche pan with butter. 2. Press thawed hash brown potatoes between paper towels 3. Fit the potatoes into pan, cutting and trimming to fit and make a solid crust. 4. Brush potatoes with melted butter, being sure to brush sides also. 5. Bake 25 minutes at 425 degrees. 6. Remove from oven and fill with layers of cheese, ham, onions, and green pepper. 7. Beat cream and 3 or 4 eggs together and pour over cheese, ham, and veggies. 8. Bake at 350 degrees for about 35 minutes or until knife comes out clean. |
