Hash Brown Cheddar Bake

Delicious, and easy recipe for a delightful morning breakfast, a fabulous brunch, or a nice and cozy dinner. Enjoy.
Ingredients:
4 cups tater tots or 4 cups hash browns
6 slices bacon
2 garlic cloves, minced
1/4 cup onion, chopped
1 cup cheddar cheese
1 (10 1/2 ounce) can condensed cream of chicken soup
1/2 cup sour cream
touch salt (optional)
1/4 teaspoon pepper
Directions:
1. Cook bacon in large pan until desired firmness is reached. Set aside and break up into small pieces.
2. In the same pan, add your garlic and onion, saute for about 10 minutes, or until onions are clear.
3. Add the tater tots or hash browns to the onions and garlic. Cover for 10 minutes or so, stirring a couple times.
4. Meanwhile, in a large bowl, combine condensed soup, sour cream, 1/4 c cheddar cheese, bacon, salt, and pepper.
5. Add the taters to the soup mixture and gently stir.
6. Grease a 9x13 baking pan and spoon the mixture into it. Add the remaining 3/4 c of cheddar cheese to the top.
7. Bake in the oven at 350 degrees for 30 minutes covered, and then another 30 minutes uncovered, or until cheese is lightly brown and sides are bubbly.
