6 large eggs |
or |
3 cartons (4 oz) cholesterol free egg product, well eaten |
1 can (12 ounces) evaporated milk (or fat free evaporated) |
1 tsp salt |
1/2 tsp ground black pepper |
1 pkg (30 ounces) frozen shredded hash brown potatoes |
2 cups (8 ounces) shredded cheddar cheese |
1 medium onion, chopped |
1 small green bell pepper, chopped |
1 c diced ham (optional) |
Directions:
1. Preheat oven to 350 2. Grease a 9 x 13 baking dish 3. Combine egg, evaporated milk, salt and pepper in a large bowl 4. Add potatoes, cheese, onion, bell pepper and ham; mix well 5. Pour mixture into the prepared baking dish 6. Bake for 60 to 65 minutes or until set 7. Note: Crumbled cooked bacon or sausage may be used to replace the ham |
