Our friend, Trish, passed this recipe on to us after a brunch in her home. This does not disappoint. Ingredients:
2 pounds frozen hash brown potatoes, thawed |
1/2 cup butter, melted |
salt and pepper to taste |
1/2 cup onion |
1 can cream soup, your choice |
2 cups grated cheese, your choice (trish used gruyere, i think) |
Directions:
1. Preheat oven to 350 degrees F. 2. Coat 9x13x2 pan with cooking spray. 3. Mix together the butter, salt and pepper, onion, cream soup and cheese. 4. Fold in the potatoes. 5. Bake, uncovered, for 50 minutes OR until potatoes are browned. |
