My version of hash brown casserole, my family loves this! Great as a side dish with catfish, meatloaf, etc. This is yummy and beyond easy and it tastes just as good with low-fat ingredient versions (ie low fat cheese, Healthy Request soup, and low-fat milk). Ingredients:
1 (20 ounce) package o'brien frozen potatoes, shredded hash brown potatoes, with peppers and onions (o'brien style) |
1 (10 3/4 ounce) can cream of chicken soup |
1/4-1/3 cup milk |
1 1/2 cups shredded cheddar cheese |
pepper, to taste |
french-fried onions, crushed, for topping (optional) |
Directions:
1. Thaw potatoes. 2. Preheat oven to 375°F. 3. Mix all ingredients, except for french-fried onions, and pour into a 9x9 inch dish. 4. Bake, covered, for 30 minutes, and uncovered for 30 minutes, stirring occasionally. 5. Top with french-fried onions and bake for about 5 more minutes, until onions are crispy and slightly browned. |
