A tasty, easy way to use up leftover ham. Clipped from Cooking Light April 2010. Ingredients:
1 1/2 cups ham, shredded or chopped |
1/2 cup chopped green onion |
2 1/2 tablespoons flour |
1/4 teaspoon salt |
1 (20 ounce) bag frozen shredded hash browns, thawed |
2 large eggs, lightly beaten |
Directions:
1. Combine ham, green onion, flour, salt and hash browns well. 2. Add the 2 eggs and toss together. 3. Scoop mixture by 1/4-cupfuls into 1 tbsp oil per batch in a large non-stick skillet over medium heat; flatten slightly and cook 5 minutes on each side until browned. |
