The combination of winter vegetables and spices make this autumn warmer. This is one of Mom's recipes. Ingredients:
1 lb ground beef |
3/4 c chopped onion |
2 cloves garlic, minced |
1 tsp salt |
pepper to season meat. |
3 1/2 c water |
2 1/4 cup sweet potatoes; peeled and chopped (1 sweet potato) |
1 cup red potatoes; chopped (1 potato) |
1 cup acorn squash; peeled, chopped (about 1/2 squash) |
2 each beef bouillon cubes |
2 bay leaves |
1/2 tsp chili powder |
1/2 tsp pepper |
1/4 tsp ground allspice |
1/4 tsp ground cloves |
1 can diced tomatoes, undrained, 14.5 oz can |
Directions:
1. In a large soup pot, cook the beef over medium heat until the meat is no longer pink. Drain. Add the onions, garlic and salt and pepper. Cook 5 minutes. 2. Add the water, potatoes, squash, bouillon, bay leaves, chili powder, pepper, allspice and cloves. Bring to a boil, then reduce heat. 3. Cover and simmer for 20-30 minutes until the potatoes are tender. 4. Note: The sweet potato and squash will be soft at this point. 5. Add the tomatoes. Cook until the tomatoes are warmed through. 6. Serve |
