I had a great harvest salad at Panera Bread that I recreated and altered a bit at home. Ingredients:
large bag of mixed greens or romaine lettuce (no iceberg) |
1 pear (any variety) |
1 large apple (slightly tart ones best, like granny smith) |
1/2cup dried cherries (sulfite and sugar free) or cranberries |
4oz crumbled feta or gorgonzola (feta for sweeter, gorgonzola for more contrast) |
raspberry vinaigrette (i use store-bought, cherry vinaigrette also works) |
2oz crumbled walnuts (optional) |
Directions:
1. Wash (if not pre-washed) greens, and place in large bowl. tear into small bite-sized pieces if necessary. 2. wash, core, and slice pears. add to bowl. 3. wash, core, and cube apples. add to bowl. 4. add cherries, cheese, and walnuts. 5. drizzle on several tablespoons of vinaigrette (to taste) 6. toss salad with wooden spoons. 7. serve chilled with French bread and goat cheese. |
