A spinach salad full of flavor and color.Toasted walnuts,blue cheese,dried cranberries and avocado tossed in a sweet and tangy raspberry dressing. Ingredients:
1/2 cup walnuts |
1 bunch spinach,rinsed,dried and torn into bite-sized pieces |
1/2 cup dried cranberries |
1/2 cup blue cheese |
2 tomatoes,chopped |
1 avocado,peeled,pitted and diced |
1/2 red onion,thinly sliced |
2 tblsp.red raspberry jam |
2 tblsp red wine vinegar |
1/3 cup olive oil |
freshly ground black pepper and salt to taste |
Directions:
1. Preheat oven to 375.Arrange walnuts in a single layer on baking sheet.Toast in oven 5 minutes,or until nuts begin to brown.Remove from oven. 2. In large bowl,toss together the spinach,walnuts,cranberries,blue cheese,tomatoes,avocado and onion. 3. In small bowl,whisk together jam,vinegar,oil,salt and pepper.Pour over salad just before serve,toss to coat. |
