I just threw together some autumnal foods that sounded good to me and it came out pretty good. Feel free to add some cayenne to kick it up if you like spicy, but I thought the flavors were great as is. I did not include the cook time for the squash as it will vary depending on the size of the squash, and this step can easliy be done ahead of time. (Can be made vegetarian {and healthy} by simply omitting the sausage) Ingredients:
1 acorn squash |
2 garlic cloves |
2 teaspoons olive oil |
1 (16 ounce) package smoked sausage |
1 large apple, any variety (i used a pink lady) |
1/2 vidalia onion |
1 green pepper |
2 teaspoons grapeseed oil |
Directions:
1. Split the squash in half and scoop out the seeds. Finely chop the garlic and add one half to each squash half. Add one tsp olive oil to each squash half. Cover with foil and bake at 375 until tender (about an hour). This step can be done a day ahead of time. 2. Slice thinly the apple and sausage. Julienne the green pepper and onion. 3. Heat the grapesed oil (canola can be subsituted) in a deep saute pan. Add the sausage, apple, onion, and green pepper. 4. While the pan is sauteing, peel and dice the squash. Add squash to the saute pan. 5. Remove from heat when apples are tender but not mushy. |
