My moms recipe. Enjoy! Ingredients:
8 ears corn, boiled and kernels removed |
2 large tomatoes, chopped |
1/4 cup chopped chives |
1/2 cup green pepper, chopped |
1/2 cup red pepper, chopped |
1/4 cup olive oil |
1/4 cup cider vinegar |
2 t. lemon juice |
1 t. minced parsley |
2 t. sugar |
1 t. salt |
1/2 t. basil |
1/8 t. cayenne pepper |
Directions:
1. In large bowl, combine corn, tomatoes, chives, and peppers. 2. In small bowl, whisk together oil, vinegar, lemon juice, parsley, sugar, basil, and cayenne pepper. 3. Pour over salad. 4. Chill for 2 hours. |
