Harvest Chicken Linguine With Blush Sauce |

Here is another quick week-night meal, that can be made iin minutes, and everyone will enjoy. A rotisserie chicken picked up at the supermarket, once again does the trick!! Ingredients:
1 (350 g) package linguine, cooked according ot package directions |
2 tablespoons pure olive oil |
1 cup chorizo sausage, dry-cured, finely diced |
2 cups sweet potatoes, peeled and diced |
1 (288 ml) package creamy tomato sauce (blush) |
1 rotisserie chicken, skin removed nad diced |
1/4 cup dried and sweetened cranberries |
1/4 cup pine nuts, toasted |
Directions:
1. Hear oil in a large skillet over medium heat. Sauté chorizo and sweet potato until caramelized, about 5 minutes. Add tomato sauce and bring to a gentle simmer. Stir in chicken and lightly heat through. Season to taste with salt and pepper. 2. Divide cooked pasta between plates, spoon sauce over. Garnish with cranberries and pinenuts. |
