Harvest Cheddar Potatoes

This is a great side dish to any chicken, pork or beef recipe
Ingredients:
6 small to medium potatoes, scrubbed, cooked, peeled and chopped
1/2 cup of green onions
1 can of cream of chicken soup
1/4 cup of butter
1 1/4 cup shredded sharp cheddar cheese
1 cup sour cream
2 cups crushed harvest cheddar sun chips or cornflakes
Directions:
1. Pre-heat oven to 350 degrees.
2. Place potatoes and green onion in 9 x 13 pan.
3. In a large saucepan add the soup, butter and cheese.
4. Heat to medium and stir until butter and cheese are melted and smooth. Remove from heat and add the sour cream.
5. Stir mixture well. Pour over the potatoes and onions and cover with a layer of the crushed chips.
6. Bake for 45 minutes until bubbly.
