I love beets! I can eat them straight from the can. The original recipe for this called for 1/3 cup of vinegar, but that was a bit much for us, so I cut it back for our family.. Ingredients:
1 can(s) sliced beets, drain but save juice |
1/2 c sugar |
1 tbsp cornstarch |
1/4 c cider vinegar |
dash salt and pepper |
reserved beet juice |
Directions:
1. Mix sugar & cornstarch in a medium-sized saucepan. Add vinegar, salt, pepper & beet juice. Cook on medium-low heat until thickened. Carefully stir in beets to heat through. |
