Harusame or cellophane noodles are often used in salad. This is a popular kind of harusame salad with a soy suce based dressing. Ingredients:
1 and 3/4 oz. harusame noodles or cellophane noodles(bean thread noodles) |
1 egg beaten |
1 small cucumber,cut in thin strips |
for dressing |
11/2tbs soy sauce |
11/2tbs rice vinegar |
2tsp sugar |
1/2tbs sesame oil |
Directions:
1. Boil water in a medium pot. Boil harusame or cellophane noodles in a pot,according to the pkg. directions. Drain noodles in a colander and cool with cold water. Drain and set aside. Heat some oil in a frying pan,and make one or two sheets of thin omelette. Cool and slice them in strips. 2. Cut drained noodles into 2 to 3 inches long. Put the noodles,cucumber and omelette in a bowl. Mix sugar,soy suce,vinegar and sesame oil in a small bowl. Pour the dressing over ingredients and mix well. Cool the salad. |
