melt in your mouth suprise cookies with a spice flavor. Freezes well..Recipe DOES NOT double well..I make 2 bowls at same time.
Ingredients:
2c. flour
1c. instant mashed potato flakes
1 1/2c.white sugar
1teaspoon baking soda
1/2teaspoon salt
1teaspoon cinnamon
1/2teaspoon ginger
1/4teaspoon cloves
1/4teaspoon nutmeg
1/4teaspoon allspice
1c. butter (room temp)
1 egg (room temp)
1/4 c. sugar set aside for glass dipping.
Directions:

2. PREHEAT OVEN 375 Degrees

4. Combine all ingredients in a large bowl. Mixing well.
5. Shape into 1 inch balls.
6. Place 2 inches apart on UNGREASED cookie sheet.
7. Flatten with glass dipped in reserve sugar.
8. Bake 7-9 mins .until edges are set and golden brown.
9. Let cool 1 min before removing to wire rack.
10. Cool Completely.
11. Store in tightly covered container.
12. Freezes well for up to 3 months.

15. This is a recipe from my Father-In-Law Harry Richter. I called him ‘Dad’ and he was my Father-In-Law when he passed and he’ll remain ‘dad’ in my heart forever. Even though I divorced his son.

17. He was one of the few men in my life that I’m so grateful to have called mine.. One of my handful of favorites. I love and miss you Dad.
