Harry Potter's Gillyweed Balls |

I found this recipe in the local paper. Ingredients:
2 (10 ounce) packages frozen chopped spinach, thawed and well-drained |
1 cup parmesan cheese, grated |
1/2 cup butter, melted |
4 green onions, finely chopped |
4 eggs, lightly beaten |
salt and pepper |
1 -2 cup italian-style seasoned bread crumbs |
Directions:
1. Preheat oven to 350°F 2. In a medium bowl combine spinach, cheese, butter, green onions, eggs, salt and pepper and just enough bread crumbs to make the mixture hold together. 3. Shape into 1-inch balls. 4. Arrange in a single layer on a large baking sheet. 5. Bake 10 to 15 minutes until lightly browned. |
