Harissa and Orange Pearl Barley Salad / Marinade |

The dressing for this salad can also be used to marinate chicken, lamb or thickly sliced eggplant. The dressing / marinade will keep in the fridge for up to 2 weeks. Ingredients:
3 tablespoons harissa |
2 small lemons, zest and juice |
4 1/2 tablespoons olive oil |
2 teaspoons honey |
1/2 teaspoon ground cumin |
salt and pepper |
7 ounces pearl barley, cooked according to pack instructions, cooled |
1 red onion, finely sliced |
2 oranges, peeled and segemented |
4 ounces arugula |
Directions:
1. Mix the first 5 ingredients together thoroughly with plenty of seasoning to make the dressing. 2. Mix the pearl barley with the onion, orange segments and arugula and stir through 4 tbs of the dressing. 3. Serve. |
