This is a tasty Moroccan stew recipe handed to me by a friend. Super simple, very tasty! Ingredients:
1 large onion, chopped |
1 shallot, chopped (or more if you like) |
1 garlic clove, chopped (or more if you like) |
1 1/4 cups green lentils |
14 ounces chickpeas, drained and rinsed |
14 ounces diced tomatoes |
1 1/2 cups vegetable stock |
1 teaspoon cumin |
1 teaspoon turmeric |
1 teaspoon ginger |
1 tablespoon olive oil |
Directions:
1. Fry onions in oil until lightly browned. 2. Add shallot, garlic, onion, spices, lentils, tomatoes and vegetable stock. 3. Simmer for 30 minutes. 4. Add chickpeas. 5. Simmer for 30 minutes. 6. Enjoy! |
