Haricots Verts With Toasted Walnuts And Chevre |

If you love goat cheese,feel free to add more in this simple dish.From Fine Cooking Ingredients:
kosher salt |
3/4 lb haricots verts(green,yellow or both) |
1tbs extra virgin olive oil |
2tbs minced shallots |
1/3c walnuts,lightly toasted and chopped |
2tsp walnut oil |
fresh ground black pepper |
2 oz. fresh goat cheese,crumbled(2/3c) |
Directions:
1. Bring med. pot of well salted water to boil. Cook beans in water till tender,2 to 3 mins. Drain,run under cold water to cool.Drain well 2. Heat olive oil in 12 skillet over med-high heat. add shallots and cook,stirring until they begin to brown,about 30 seconds. Stir in walnuts. Add walnut oil and beans and cook,stirring to hear thru,2 to 3 mins. Season to taste with salt and pepper and transfer beans to serving dish. Sprinkle goat cheese over the top and serve. |
