The Old Farmer's Almanac Colonial Cookbook, edited by Clarissa M. Silitch. Not sure how many it will serve. Ingredients:
3/4 cup quick rolled oats |
1 egg, beaten |
1/2 cup sifted flour |
3/4 tsp salt |
1/2 tsp soda |
1 1/2 cups buttermilk |
1 tbs sugar |
butter |
molasses sauce |
1/4 cup butter |
1/2 cup molasses |
Directions:
1. Mix oats with buttermilk and let stand 10 minutes. Then add other ingredients, mixing well. Let stand to blend for a few minutes. If batter is too thick, add more milk; if too thin, add flour. Grease the griddle. Fry cakes in butter over low heat on both sides. Serve with molasses sauce. 2. Molasses Sauce: 3. Cream the butter and molasses, heat, and serve over oatmeal pancakes with ham, bacon, or crisp salt pork. |
