yummie and healthy kababs made of leafy veggies. Ingredients:
1 bunch spinach |
1 cup mint leaf |
1 cup cilantro or 1 cup coriander |
1/2 cup peas (cooked) |
2 potatoes |
1 cup rice flour |
1 tablespoon mango powder (amchur, incase this is not available, you can use 1 tbsp lemon juice) |
2 -3 green chilies (finely chopped, or as per spice level required ) |
1 teaspoon salt (or as per taste) |
1/2 teaspoon cumin powder |
1/2 teaspoon coriander powder |
2 cloves |
2 black peppercorns |
1/4 cinnamon stick |
5 -6 cashews (chopped ) |
1/4 cup oil |
Directions:
1. Chop spinach, mint leaves and cilantro and mix. 2. Boil/bake potatoes and smash them and add to above mixture. 3. Defrost peas if frozen or cook them if fresh are available and mix with the leafy veggies above. 4. Grind cloves, Black Peppercorns and cinnamon to powder form and add to the mixture above. 5. Add salt, cumin powder, dried mango powder, corriander powder, cashews and green chillies as well. 6. Mix the mixture with hands very well and form patties. 7. Roll each pattie in Rice flour (alternatively bread crumbs can be used). 8. Shallow fry these patties in oil in a pan till golden brown. |
