Happy Lean Turkey Meatloaf

My husband and I have been trying to eat healthy during the last year or so and substituting beef for turkey almost every chance we get. I was mixing ingredients together to come up with this recipe one night and it has stuck with us.
Ingredients:
1 lb ground turkey breast
1/2 cup chopped onion
3/4 cup chunky mild salsa
1/4 cup egg substitute
1/3 cup panko breadcrumbs
1/3 cup grated parmesan cheese
1 tomato, large and sliced
2 tablespoons fresh parsley leaves, fresh chopped (or use some cilantro)

pepper
Directions:
1. Mix together the turkey, onion, salsa, egg substitute, 1/4 cup of the Bread Crumbs, 1/4 cup of the cheese, Parsley, Salt and Pepper.
2. Shape into a loaf shape or place into a loaf pan. Top with the loaf with the tomato slices and the remaining bread crumbs and cheese.
3. Bake at 350 for about 40 minutes, or until cooked to 160 degrees internally. You may want to cover the top with foil if it becomes too brown.
