This is a pretty little cake with a great plum taste. Pretty on the platter, delightful on the palate. Enjoy
Ingredients:
1 cup unsalted butter
3/4 cup granulated sugar
3/4 cup firmly packed dark brown sugar
2 large eggs
1 teaspoon vanilla extract
2-1/2 cups all purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
16 ounce can purple plums packed in syrup well drained and plums chopped (reserve syrup)
confectioners' sugar
Directions:
1. Preheat oven to 400 then butter a rectangular cake pan well.
2. Beat butter until creamy and light then gradually add sugars beating until creamy and smooth.
3. Beat in eggs then vanilla.
4. Sift flour, baking powder, baking soda, salt and cinnamon together.
5. Stir dry ingredients into the butter mixture alternating with 1/2 cup reserved syrup.
6. Begin and end with dry ingredients then stir in plums and pour batter into pan.
7. Bake 30 minutes then turn cake out onto a rack and allow it to cool completely.
8. Dust with confectioners' sugar and serve.
