Happy Camper Potato Salad |

We made this to take to a hot summer music festival so that we could have a big hearty meal ready that we didn't have to prepare. It was so delish a fellow camper asked me for the recipe. Ingredients:
2 lbs potatoes, cooked and cubed (5 big or 8 small potatoes) |
1 green pepper, chopped |
1 sweet onion, chopped |
3 stalks celery, chopped |
2 (16 ounce) cans beans (white, black or chick peas) |
1/3 cup olive oil (or to taste) |
1/4 cup apple cider vinegar (or to taste) |
1/4 cup red wine vinegar (or to taste) |
1/2 cup fresh basil, chopped |
3/4 cup sun-dried tomato, diced |
1 tablespoon lemon juice |
2 teaspoons honey |
1 teaspoon onion powder |
1 teaspoon garlic powder |
salt and pepper |
Directions:
1. Combine all ingredients and enjoy! If it lacks flavor just boost whatever seasonings you want. I might have thrown in a teaspoon of miso paste, I can't remember. That adds a little almost cheddary flavor that I like. |
