This recipe is really old, but it's still good. My grammy used to call it Apple Pudding, but to me it isn't pudding so I renamed it. Sorry gram.
Ingredients:
3-4 apples, washed peeled and sliced
1 egg
1/2 cup sugar
1 cup flour
1 teaspoon baking powder
1/2 cup milk
1 tablespoon melted butter
cinnamon
sugar
Directions:
1. Butter, do not flour, a 1-1/2 quart baking dish.
2. Layer the apple slices to fill the dish half way full.
3. Sprinkle the apple slices with cinnamon and sugar.
4. In a mixing bowl, beat 1 egg well.
5. Add 1/2 cup sugar and beat until creamy.
6. Add flour, baking powder, milk and melted butter.
7. Beat thoroughly and pour over apples.
8. Sprinkle with additional cinnamon.
9. Bake at 350 degrees for 30-40 using the cake test method to assess the done factor.
10. Serve in bowls, warm, with cream. (I guess whipped topping would be good too, but we always got them with some cream.)
