I'm not much of a baker, so if I do venture out a try to bake the recipe has to be pretty easy! These, candy-like bar cookies come from a Swedish recipe from a cookbook called Chicago Entertains . Ingredients:
1 cup sweet butter, softened |
1 cup firmly packed dark brown sugar |
1 egg, separated |
2 cups all-purpose flour |
1/2 teaspoon salt |
1 1/2 teaspoons cinnamon |
1/2 cup walnuts or 1/2 cup pecans, chopped |
Directions:
1. Preheat oven to 350 degrees. 2. Cream butter and sugar until fluffy; beat in egg yolk. 3. Mix flour, salt, and cinnamon; beat into butter mixture. 4. Pat thinly into un-greased 15 1/4 x 10 1/4-inch baking pan. Lightly beat egg white and brush over batter. Sprinkle with nuts. 5. Bake 25 minutes or until firm to touch. 6. Cut into squares while still warm. 7. Tips: These cookies are also attractive cut diagonally into diamonds. After cutting, remove them from the pan to cool. |
