a whole sunday brunch in itself. Family recipe most especially loved by the elders. Ingredients:
3 cups flour |
1 tsp baking soda |
2 tsp cinnamon |
2/3 c grated coconut |
1 cup canola oil |
4 tsp vanilla extract |
3/4 tsp salt |
2 cups sugar |
3 eggs, beaten |
2 cups mashed ripe bananas |
1 1/2 cups chopped macadamia nuts |
1 8 oz can crushed pineapple |
Directions:
1. Combine flour, salt, baking soda, sugar and cinnamon. 2. Combine remaining ingredients together, add to flour, stirring just until dry ingredients are moistened. 3. Spoon batter into 2 greased and floured (or use Pam) loaf pans. 4. Bake at 350 F for 1 hour 10 minutes. 5. Remove from pans and let cool on wire racks. |
