This is my ham and beans. Football grub today. Goes good with cornbread (of course). Top it off with some french fried onions, fresh onions or both. Ingredients:
2 lbs great northern beans |
2 cured ham hocks |
32 oz box of chicken broth |
2 celery stalks (chopped) |
2 carrots (sliced into discs) |
1 yellow onion (chopped) |
stick of butter |
2 t extra virgin olive oil (evoo) |
salt and pepper |
Directions:
1. *Night before: Sort, rinse, soak beans. 2. *Next morning: Rinse beans. 3. Place beans in slocooker with ham hocks. 4. Add enough chicken broth to cover beans. (add water if needed) 5. Cover and cook on low. 6. After 4 hours saute veggies in evoo and a pat of butter. 7. Add veggies to beans. 8. Add rest of butter to beans. 9. Continue cooking for 4 hours more or until tender. 10. Season with salt and pepper 11. Enjoy! 12. (p.s. Everyone knows these are even better the next day!) |
