Hamburger Vegetable Soup meaty comfort food that also freezes very well. Ingredients:
1 lb hamburger, cooked |
1 cup onion, chopped |
1 cup potato, diced |
1 cup carrot, diced |
1 cup cabbage, cut up |
1 cup celery, cut up |
4 cups tomatoes, cut up (fresh, frozen or canned) |
1/4 cup rice |
3 cups water |
4 teaspoons salt |
1/4 teaspoon basil |
1/4 teaspoon thyme |
1 bay leaf |
1 pinch paprika |
1 pinch garlic powder |
1 pinch black pepper |
1 pinch onion powder |
1 pinch cayenne pepper |
1 pinch dried oregano |
1 pinch dried thyme |
Directions:
1. Brown hamburger and onion. Drain. Combine all ingredients less the rice in a stock pot. Simmer for 2 hours. Add rice and simmer another hour. |
