hamburgers with pasta in a creamy sauce and about 270 calories per serving! Ingredients:
8 oz elbow macaroni noodles |
18 oz hamburger patties (about 8 patties), cooked and well-drained |
1 tbl butter |
1 small onion, sliced thin and separated into rings |
1/4 cup bell peppers, yellow and red |
4 oz (1 can) mushrooms, drained |
10 1/2 oz (1 can) fit & active cream of mushroom soup |
1/2 cup beef broth |
1/4 cup fat free sour cream |
Directions:
1. Cook macaroni per package direction, omitting salt or using a salt substitute. Cook al dente. 2. Spray a large skillet with non-stick cooking spray, warm over high heat. Reduce heat to medium, add butter, onion, peppers, and mushrooms. Cook until vegetables are tender. Remove vegetables to small bowl. 3. Add hamburgers to skillet and pan fry, 4 minutes each side. Remove hamburgers to plate - drain well. 4. Discard hamburger grease, and wipe skillet with papertowel to remove remaining fat. Return vegetables to skillet, add soup, beef broth, and sour cream. Stir until well-blended, return hamburgers to skillet, spooning sauce over patties. Put lid on skillet and reduce heat to low. Simmer about 7 minutes. 5. Remove hamburgers to plate, keep warm. Add noodles to sauce in skillet, stir well and simmer 2 minutes. 6. Serve. 1 hamburger and 3/4 cups noodle per person. |
