Delicious easy and fast. This makes enough to feed a crowd or to freeze. Ingredients:
3 pounds extra-lean ground beef |
1 litre fat-free beef stock |
1 litre chopped tomatoes |
840 g (6) sweet potatoes chopped |
2 cups carrots chopped |
2 cups celery chopped |
1/2 cup red pepper diced |
1/2 cup green pepper diced |
12 pieces cremini mushrooms sliced |
2 t tomato paste |
1 t salt |
1 t pepper |
3 oz parsley |
5 g (1 t) worchestershire sauce |
Directions:
1. fry beef (you may need 2 pans) 2. add to big stew-pot with stock and tomatoes and boil 3. fry mushrooms 4. add mushrooms and all remaining veg to pot, reduce heat to med 5. stir frequently 6. check seasonings, add more tom paste, s&p and worchestershire as needed 7. serve with wh wheat bread or noodles |
